Ennai Kathirikai kuzhambu

Ingredients
Small Brinjal-6
Small Onion-10
Tomato-1
Green Chilly-1
Garlic-4 or 5 pods
Oil-8tbsp
Tamarind- half lemon size
Turmeric Powder- a pinch
Sambar Powder-5tsp
Salt-to taste

Seasoning
Fennel seeds- Little
Fenugreek seeds-Little
Curry Leaves-Little

Method
Cut the onion,tomato,and garlic into small pieces.Slit the green chilly and slit into each brinjal.Soak the tamarind into 4 cups of water.Keep the kadai in stove and put the oil into tawa.Seasoning the items in the oil.Add the onion,tomato and green chilly.Saute for a while.Then add the brinjal and fry well.Put sambar powder,turmeric powder and salt.Then saute for a while.Add the tamarind juice and salt.Cook in high flame for 5mins.Then reduce the flame and wait for the oil to separate.
